Housed in a shipping container right here on the West Side, Enlightened Crops is an ecofriendly + hydroponic farm, growing in 340 square feet what a traditional farm can do in an acre and a half. Enlightened Crops is an excellent neighbor and produce vendor, bringing us everything from fresh basil and arugula to romaine and pea shoots. Since they’re hyperlocal, these vertical crops are harvested and brought to us the very same day! Check out how awesome their setup is!

With spring around the corner, we know you’re thinking about your favorite spring and summertime fresh-focused foods. Our friends at Enlightened Crops shared one of their favorite ways to use their fresh basil: Pesto! Check out their go-to recipe, and give their hyperlocal (Seward Avenue!) vertical garden basil a try. (We recommend it too!)

Bridge Street Pesto

Ingredients:
2 cups of packed basil leaves
5 cloves of garlic
1/4 cup pine nuts
1/2 cup olive oil, divided
kosher salt
ground pepper
grated Parmesan cheese (optional)

1. Combine basil, garlic and pine nuts in food processor until coarsely chopped
2. Add oil and process until totally mixed and smooth
3. Season with salt and pepper as desired
4. Top with freshly grated Parmesan cheese

Winter Sangria

Whether you’re decking the halls or not, winter is coming here in West Michigan, so why not have a delicious Winter Sangria to cozy up with? We’re loving this simple Winter Sangria recipe, which was inspired by a few Sangrias we’ve tried along the way.

Winter Sangria
1 bottle of red wine (we used Stella Rosa Black, which has a nice effervescence to it)
1/4 cup of Brandy
1/4 cup of Agave Nectar (found in our cocktail mixer section)
1 cup of frozen fruit (we used Michigan Farm to Freezer brand’s West Michigan Smoothie Blend, which features Michigan-grown fruit! This blend has pitted tart cherries, blueberries, & apple slices. Yum!)
Juice of 1/2 a lime
2 cinnamon sticks

Combine all ingredients in a pitcher, let sit anywhere from an hour up to overnight. The longer it sits, the more those delicious flavors will combine! ‘Tis the season!

Michigan vs. Michigan State is upon us this weekend, and we’re sharing a couple of our favorite dips to add some flavor to your game day.

Bridge Street Dips

Creamy Jalapeno Dip

What you’ll need:
3 jalapenos, seeded and diced
Poblano, seeded and diced
2 cloves of garlic, minced
1/2 tsp onion powder
8oz cream cheese
1/4 cup sour cream
2 1/2 cups Mexican Cheese
7oz can of diced green chilies

Preheat the oven to 375 degrees.

You’ll want to add a little oil to a pan over medium heat and toss in your jalapenos and poblano for about 2 minutes, then stir in your minced garlic. Let it cook for another 30 seconds. Transfer to mixing bowl. Incorporate cream cheese, sour cream, onion powder, 2/3 of the cheese, and all of the green chilies. Stir until all is combined.

Spray a baking dish and pour the mixture into it. Top with extra cheese. Place in oven for 15-20 minutes. Serve with tortilla chips.

Quick and Easy Lasagna Dip

You’ll need:
1/2 lb ground turkey OR 1 pack of Nutcase Vegan Meats Hot Italian Sausage
(If you’re using turkey, add some spices. We love shaking in some dried oregano, garlic powder, onion powder, paprika, dried red pepper flakes. Flavor is key!)
2 cups pasta sauce (We love Sansonetti’s Spicy Arrabbiatta)
1 cup cottage cheese or ricotta
1 cup mozzarella

Preheat the oven to 375 degrees. You will want to cook the ground turkey or Nutcase Vegan Hot Italian Sausage over medium heat in an oiled pan. If you’re using plain old ground turkey, spice it up as suggested above. If you’re using Nutcase Vegan Hot Italian Sausage, you’re golden once it’s done browning up.

Spray a baking dish, and cover the bottom with some of the pasta sauce. Layer in the cottage cheese or ricotta. Stir the rest of the pasta sauce in with the meat, then transfer into the baking dish. Top with the mozzarella.

Place baking dish in the oven, covered with foil, for about 15 minutes or until cheese has melted and is bubbling. Serve with tortilla chips!

Homemade Apple Pie Filling

Since we’re in the height of Michigan Apple season we thought we’d share our favorite Homemade Apple Pie Filling recipe with you. We suggest multiplying the recipe and making a large batch and freezing it: you’ll be party ready all fall & winter. Hey, don’t be scared if you aren’t crazy about pie: there are so many uses for this Apple Pie Filling. You can use it in Cobblers, Crisps, Cakes, Cheesecakes, Cupcakes, Pastries, Dessert Bars, Muffins, Tarts, Trifles, Tortes, and more.

This recipe is the equivalent of 1 can of Apple Pie Filling. Again: Multiply and freeze it. You’ll thank us later.

For the apples, we suggest a mix of Ida Red or Paula Red mixed with Red Delicious or Gala — we think these are the best Michigan options to give you that classic Apple Pie flavor while holding up well under cooking and potentially freezing.

What you’ll need:
4 apples, peeled, cored, & chopped or sliced
3 tablespoons water + 2 tablespoons water later
2 tablespoons butter
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/3 cup sugar
1 tablespoon + 1 teaspoon cornstarch

Place butter in a pan over medium heat and add the cinnamon and nutmeg, cooking 15-20 seconds or until fragrant. Add the apples, sugar, and 3 tablespoons of water. Stir together and cover for 4 minutes. Make sure to check on the mixture so it doesn’t burn on the bottom of the pan — stir as necessary in that timeframe.

Combine cornstarch and the other 2 tablespoons of water. When the apples feel a little cooked, stir in the cornstarch+water mixture and allow everything to continue to cook until the apples are tender and the glaze has gotten thicker. Once it’s done, remove it from the heat and let it cool off before using it in another recipe or freezing it for later.

Tacos 3 Ways: Chicken, Beef, & Cauliflower + Kale

In honor of National Taco Day, we’re sharing a couple of our go-to recipes: Shredded Chicken Tacos, Easy Ground Beef (or Turkey!) Tacos, and our crave-worthy Cauliflower + Kale Tacos.

There are few things as fun and delicious as homemade tacos. Shredded chicken can seem like a chore, but it really isn’t. You can either toss it in the crock pot, or you can just cook it down yourself over medium heat. We opted for the latter for our Shredded Chicken Tacos Recipe, and we know you’ll love it.

For a busy weeknight, you can’t deny the satisfaction of a quick and delicious homemade dinner like a classic ground beef or turkey taco. Any dinner done in about half an hour is a recipe to keep pinned and ready for any occasion. Check out our Easy Ground Beef (or Turkey) Taco Recipe.

Vegetarian? Or maybe you’re just someone who likes to try to eat more vegetables? Cauliflower + Kale Tacos. You’re going to be happy you tried it!

Shredded Chicken Tacos

2lbs boneless, skinless chicken breasts
Low-sodium chicken broth
White onion, diced
2 jalapeños, diced
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons dried oregano
1 teaspoon smoked paprika
3 cloves of garlic, minced
10 oz can of diced tomatoes with green chilies
2 jalapeños, diced
El Milagro corn tortillas
Toppings for the tacos

Place chicken, diced white onion, and just enough low-sodium chicken broth to cover the chicken in a pot over medium heat. Toss in all spices and minced garlic. You’ll let this cook, covered for around 20 minutes, turning the chicken over as necessary. You’ll want to lower the heat to medium low, where it’s still simmering, uncovered for about 45 minutes or until the chicken shreds easily with two forks, continuing to turn the chicken over as necessary. Once shredded, you’ll stir in the diced tomatoes with green chilies and the diced jalapeños. Continue to cook down until the liquid in the pot has become a nice sauce just coating the shredded chicken.

For heating corn tortillas (and yes, you should always heat your corn tortillas!), we advise heating a skillet pan over medium heat and tossing your tortillas in there one at a time (or two at a time if it’s a big enough pan to still heat them individually!). You’ll flip the tortilla after 20-30 seconds, making sure that the tortilla is lightly browned.

Once your tortillas are set, you can start building your tacos with whatever suits you. We love using fresh cilantro, sliced avocado, refried black beans, pickled red onions, baby spinach, shredded cheese, and squeezing a little fresh lime juice over the top. Don’t forget the fresh salsa for the side!

These chicken tacos are also excellent for a next-level-amazing huevos brunch… We’ll be sharing that recipe with you soon!

Easy Ground Beef (or Turkey) Tacos

You’ll need:
1lb ground beef or ground turkey
1/2 white onion
2 cloves garlic, minced
1 1/2 tablespoons chili powder
1/2 tablespoon cumin
2 teaspoons dried oregano
1 teaspoon smoked paprika
1 teaspoon coriander
8oz can tomato sauce
El Milagro corn tortillas
Toppings

In a skillet over medium heat, add the ground beef or ground turkey and the onion. Cook for about 5 minutes or until cooked through, continuously stirring and breaking up the meat. Stir in the spices + minced garlic and allow to cook for about 30 seconds, then reduce the heat to medium-low and add the tomato sauce. Allow to simmer for another 10 minutes or until the sauce has cooked down nicely.

For heating corn tortillas (and yes, you should always heat your corn tortillas!), we advise heating a skillet pan over medium heat and tossing your tortillas in there one at a time (or two at a time if it’s a big enough pan to still heat them individually!). You’ll flip the tortilla after 20-30 seconds, making sure that the tortilla is lightly browned.

Once the tortillas are ready, you can start building your tacos. We love the tried and true toppings like shredded lettuce, tomato, sour cream, avocado, and cheese.

This taco meat is also excellent on sweet potato fries, a salad, in an enchilada, as part of a delicious Tex-Mex inspired dip… Be creative - and don’t forget to let us in on what you used it for!

Cauliflower + Kale Tacos

For the Cauliflower:
1 head of cauliflower, cut into bite-sized pieces
1 tablespoon chili powder
1/2 tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
olive oil
El Milagro corn tortillas

For the Kale:
Bunch of kale, chopped
1/2 lime juice
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
olive oil

Place cauliflower florets into a bowl and lightly coat in olive oil (or whatever oil you prefer), then stir in spices. Preheat the oven to 350 degrees. Spray a baking sheet or line it with parchment paper. Toss the spiced cauliflower onto the baking sheet and place them in the oven for 10 minutes. After 10 minutes, you’ll want to flip them over and place back into the oven for another 10 or until tender.

In a skillet, you will add a little bit of oil, the kale, and spices. Cook for no longer than 2 minutes.

For heating corn tortillas (and yes, you should always heat your corn tortillas!), we advise heating a skillet pan over medium heat and tossing your tortillas in there one at a time (or two at a time if it’s a big enough pan to still heat them individually!). You’ll flip the tortilla after 20-30 seconds, making sure that the tortilla is lightly browned.

Once the tortillas are ready, you can start building your Cauliflower + Kale tacos. We love adding fresh cilantro, avocado, and fresh salsa to these. There are a lot of amazing vegetarian and vegan-friendly sauces you could add as well, like this Cilantro-Cashew Cream Sauce. So good!

Cilantro-Cashew Cream Sauce

You’ll need:

1 cup raw cashews, soaked overnight in water
Juice from 1/2 lime
1 tablespoon olive oil
Handful fresh cilantro
Avocado
Jalapeño, diced
Garlic clove, peeled
1 teaspoon nutritional yeast

After soaking the cashews overnight, you will drain them and then put them into a blender. You’ll add the rest of the ingredients and blend until a creamy dressing forms. Use this to top tacos, enchiladas, salads, and more.

Planning for lunch can be such a task in the hustle and bustle of everyday life. We love the ease of grabbing a salad or a Fresh & Fast meal in our cafe… but, what about flexing your cooking muscles? (Or trying to grow your cooking muscles… All skill levels are welcome here.)

Let us introduce you to: THE SWEET POTATO

When you hear sweet potato, you may automatically think of the classic Thanksgiving side dish drowning in brown sugar and butter. That’s a thing, but it isn’t quite what we’re suggesting for lunch (…unless you want that. Then who are we to hold you back?). Sweet potatoes are so versatile, and with the right seasoning, prep, and pairing with other ingredients, you can fulfill any lunchtime craving while also upping your veggie intake. What kind of dishes are we talking about?

We love to make Sweet Potato Taco Bowls… Curried Sweet Potato Bowls… Cajun Sweet Potato Bowls… You get the idea! The list goes on and on. Whatever sweet potato path you take, we’re confident you’ll love what you create. Let’s go over the basics:

You’ll want at least 1 lb of sweet potatoes — so you can potentially have it for more than one day (meal prepping will save you time and money)! You’ll clean the sweet potatoes, peel them, and then cut them into 1”-2” cubes. You’ll throw them in a bowl and do a quick coating of olive oil (or whatever oil you prefer).

Now is the part where you decide what you’re going for…

Taco? Add:
1.5 teaspoons chili powder
1 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion Powder
Sprinkle of salt + pepper

Curry? Add:
1 1/2 teaspoons curry powder
1/2 teaspoon paprika
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon cumin
1/4 teaspoon cayenne
Sprinkle of salt + pepper

Cajun? Add:
1.5 teaspoons smoked paprika
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne
Sprinkle of salt + pepper

Once you add your respective spices, you’ll stir the sweet potatoes to coat them. Preheat the oven to 375 degrees. Spray a baking sheet or line it with parchment paper. Toss your spiced sweet potatoes onto the baking sheet and then place them in the oven for 10 minutes.
